1 1/2 cup flour
1 tsp baking powder
3/4 cup sugar ( if using mashed ube - cut to 1/2 if using the jam or halaya)
1/4 tsp salt
1/2 cup butter room temperature
3/4 cup sugar ( if using mashed ube - cut to 1/2 if using the jam or halaya)
1 large egg
1 tbsp buttermilk
2 tsp ube extract
1 tsp food coloring (blue & red)
1/2 cup powdered sugar for coating
First, mix the dry ingredients ( the first four) and set it aside. Cream the butter and sugar in the mixer with a flat beater. Add egg. Add the 3 wet ingredients (buttermilk, extract, food color). Then slowly add the dry ingredients dividing it into 1/3 portion at a time. Finally, add in the ube halaya (or mashed ube with butter). Set it aside and let it cool in the fridge for 2 hours. Once set, scoop a portion, make into a round ball shape and drenched it heavily in the powdered sugar and place in a lined baking tray. Bake 350 for 12-15 minutes.
