Creamy Kalabasa (Squash) Soup


Here are the ingredients:

3 cups diced squash
1 cup diced celery
1 cup diced carrots
1 apple (optional)
2 tbsp butter
2 cloves garlic
1/2 onion
lemon zest and lemon juice
parmesan and cheese


salt and pepper


Sautee garlic and onion in butter. Add the carrots, celery, squash, and apple if you have and add about 5-6 cups of water. Let it simmer until the vegetables are cooked and soft. Turn the heat to low and then run in the hand blender until the soup is a smoothie consistency. Add parmesan & your choice of cheese then salt and pepper to taste. Simmer for another 2 minutes just to melt the cheese. Finally, add lemon zest. I like to add a little bit of lemon juice but I serve it separately. Pair it with your choice of bread. In this meal, we added cheese to a sliced ciabatta bread and bake it till the cheese is melted. Absolutely yummy!  Try it for yourself.
