Seafood & Sausage Boil



I found a fresh organic mussel from Costco and I thought it would be a good idea to dish up a meal for our family potluck gathering. I decided to make Seafood Boil with added sausage and carb source to make it a complete meal. Here is the recipe.

  • 2 lb mussels
  • 2lb shrimp, deveined and shelled
  • 1 lb scored squid
  • 2 lb sausage
  • 2 lb baby potatoes cut in half
  • 4 corn husk cut in quarter
  • olive oil
  • lots of butter
  • garlic
  • chilli flakes
  • lemon
  • parsley
  • salt /pepper/ sugar to taste
  • annatto seeds
  • cream



First, bring water to boil in a pan and cook the baby potatoes, set aside. In the same pan cook the corn, remove from pan and smear with a little butter and set aside. In the same pan, add the mussels and let it cook, drain and set aside too. Next, heat butter with a little bit of olive oil in the wok and add the garlic. Sautee the shrimp first until its fully cooked but be careful not to overcook it, probably for about 3 to 5 minutes then set it aside. Cook also the sausage and the scored squid in the same pan and set it aside. 

For sauce:

Add more butter in the same wok (about 1/2 cup) and more garlic if desired. Stir in a little bit of chilli flakes depending on how much spice you can tolerate. Add 1 can of cream and half of the lemon juice. Stir well until well incorporated. Add salt, pepper and sugar to taste. Put the annatto seeds in a strainer and let it run in the sauce to add the colour - remove and throw when you get the desired color of the sauce. Set half of the sauce for serving later. In the remaining sauce, add all the ingredients back in the wok until everything is coated with the sauce. Mix in the remaining half lemon juice. Transfer to a serving dish and garnish with chopped parsley and lemon slices. Serve with love and the sauce on the side
