Green Beans Guisado

Guisado is a Filipino term for sauteeing. I don't know if the origin of this word is Spanish but in my native tongue, the term is "ginisa" meaning cooked in a little oil with garlic and onion. This is a type of cooking that I learned growing up. You can usually do whatever kind vegetable and meat you have. One of the most common is using string beans with tofu and pork, but in my case here, I substitute the Asian string beans with local green beans and some ground beef. The ultimate secret is the seasoning like Toyo-Mansi, which adds saltiness and a bit of sourness to your taste. So here's my take of the Green Beans Guisado.

Ingredients:

2 cloves garlic
1/2 onion head
250 grams of ground meat
1 small pack fried tofu ( available in your local Asian store)
1 bell pepper
1 green onion leaves
3 cups of sliced green beans ( about 1.5 inches)
3-4 tbsp Toyo-Mansi (Soy sauce with Lemon or vinegar if you don't have the Toyo-Mansi, add 1-2 Tsp of vinegar or lemon juice to 1/8 cup soy sauce)
A dash of salt, pepper, and sugar
oil for sauteeing.

First, saute your onion until translucent, add the ground meat and garlic. Continue mixing until the meat turns brown. I usually add the salt and pepper at this point so it is absorbed by the meat. Let it simmer for a few minutes making sure that the meat is fully cooked. Add the tofu then stir in the bell peppers and green beans. Continue to stir for a few minutes, then add the Toyo-Mansi. Do not overcook. It is best when the beans will still be crunchy when served. Garnished with green onions. You'll love this with rice.
